Breakfast Egg-Muffins!


I thought that I should include some recipes! It's Wednesday morning and all I can think about right now are these delicious little, bite sized omelet muffins! I fill mine up with green and red peppers, onion, spicy sausage, spinach, and of course, eggs! This recipe of mine is a tweek from the original recipe I found online from Snacking In The Kitchen. As I cook, I always make little changes or veer off from the recipe and make it my own!

What You Will Need:
1 pound of Italian sausage (any spice level or flavor!)
2 cups of spinach
1 cup of red peppers
1 cup of green peppers
1/2 a cup of white or red onion
8 large eggs
1/2 cup of milk
1/2 tsp of baking powder
salt & pepper to taste
cheese to add as much as you want! (parmesan, mozzarella, and cheddar are my favorite!)

What To Do:
1. Preheat oven to 375 F
2. Brown your Italian sausage for about 5 min in a saute pan. Make sure to break the sausage links into small pieces that will fit into your muffin pan!
3. Remove from heat and add your spinach, green, and red peppers
4. Whisk your eggs, milk, and baking powder together. Season with salt and pepper
5. Spray 12-cupcake pan with non-stick oil
6.Spoon in the sausage and vegetables into the cupcake pan. The spinach may stick out weird, but it will cook and shrink it's size once it's cooked! This is important to do first because then you can see how much you are putting in each.
7. Ladle the egg mix into each individual cupcake, make sure to fill up a little past half way mark
8. Add your cheese!
9. Bake for 15-20 minutes



I found it easier to take a knife and cut around the omelet muffin to get it out of the pan before the pan cools down. As the muffin is cooling down in the pan, it is still cooking because the pan is hot. You don't want over cooked or burnt omelet muffins so make sure to get those babies out!

I like to serve these in threes with some hot sauce drizzled over them and with a side of toast and served with orange juice. If you do not like hot sauce you can always add ketchup or salsa, or just eat it plain! 

As I changed this recipe for my liking, you can obviously do it, too! Find your inner chef and find an even better version of this recipe. Once you do, make sure to let me know though!

Spring has... NOT arrived!

Hello lovelies!


Today is the first day of Spring, but here in Chicago it feels more like the first day of Winter! At a shockingly cold 19 degrees it is a pretty chilly and unbearable! Where is the sunny, warm, Spring weather, Mother Nature!? I started off my morning waking up to the sun shining in my room! Looking outside was so deceiving because the sun looked so warm! Good think I looked at the weather because let me tell you, I would have walked out in some cut off jeans and flats if I hadn't! I got some breakfast, oatmeal with cranberries and almond slices, two hard boiled eggs, and then hopped on the bus to go downtown! Today I had my 9:20am and 10:25 am classes at my downtown campus in Chicago. After classes, I enjoyed a nice cup of joe from the Starbucks and I hopped back onto the shuttle. I am currently snuggled up back in my room with a steaming pot of tea brewing! This is such a perfect day to look outside and watch the El pass by while blogging to you all. I hope everyone else's Wednesday is treating them well (never mind the cold!) and I hope you all have a lovely week!
